Characteristics
They live over deep, soft ocean bottoms and sometimes around reefs from the Bering Sea to northern Baja California. They feed on crustaceans and other invertebrates. These fish do not belong to the Sebastes complex, as do the other Rockfish, but all of them belong to the larger Scorpaenidae or "scorpion fish" family, whose characteristics include mildly venomous spines along the dorsalridge. The flesh of Ocean Cats is bright cream which contrasts dramatically with the brillant red tail fin. This fish has the whitest flesh of the Rockfish family.

Three to 7 days, depending on the quality of handling the fish has received.

How to store
Whole fish should be buried in ice with the belly cavity full of ice, since this is
where deterioration happens most quickly. Adding ice to the belly slows this
enzymatic process.
