Characteristics
The Petrale Sole lives over rocks and soft ocean bottoms from the Bering Sea to Baja California. It is one of the larger Flatfishes, and has an excellent meat quality. It has olive brown skin and ivory, or cream-colored flesh.The flavor and thickness of the fillets makes it the Cadillac of the Flatfish family.

Three to 7 days, depending on the quality of handling the fish has received.

How to store
Petrale Sole should be buried in ice with the belly cavity full of ice, since this is where deterioration happens most quickly. Adding ice to the belly slows this enzymatic process.
